Hi, my name is Stefano Noli, I'm 31 and I'm a Pitmaster!
In English "master" means "dominator", while the "Pit" is a rudimentary cooking tool made up of a concrete parallelepiped in which burning wood is placed on one side and food on the other on a suspended grill.
The Pit, in its cheapness, simplicity of construction and roughness of use was the main cooking tool with which the barbecue was made in America.

I became passionate about the world of barbecue in 2012 thanks to a television series that followed American bbq cooks in exciting competitions and Barbecue cooking competitions.
I currently compete in KCBS (Kansas City Barbeque Society) nationally and internationally with my SouthBrixiaBBQ team who have achieved a great deal of success and satisfaction since 2014 over the years!
KCBS is a competitive cooking organization headquartered in Kansas City, Missouri and is the largest competitive barbecue organization in the world, with over 15,000 members.

These are essentially poor meats that are smoked on the barbecue, such as pork shoulders and ribs, beef brisket, sausages and chicken, cooked at low temperatures with wood smoke.
However, American Barbecue does not stop at competition alone, but is also culture, tradition, conviviality, celebration... A real lifestyle, a deep and stainless bond between wood, fire, meat and smoke.
